The first Pinot Noir we have released under ‘Le Grand Coq’. This Pinot Noir was also grown at the majestic Mount Gisborne vineyard, on 35 year old vines.
These vines are also caned pruned and habitually produce crops of less than 1.5 tonnes to the acre, producing a full flavoured wine..
Our winemaking belief is that good fruit should be treated gently and with minimal intervention. The Bress 2016 Le Grand Coq Noir Macedon Pinot Noir was treated in this manner. The grapes were carbonically macerated for a week prior to fermentation with a high percentage of whole bunches. The fruit was whole bunch pressed directly into two brand new Dargaud–Jaegele Hogsheads. Fermentation was conducted on 100% solids using only indigenous yeast and the wine subsequently underwent a large proportion of malolactic fermentation. The wine was bottled un-fined, with gentle filtering to ensure maximum retention of the flavours inherent in this wine.
